Last week, I started another blog series based on questions I’ve been asked.
This time, I wanted to give suggestions about incorporating vegetables into your meals.
You know I advocate for 16 oz. of vegetables per day…
And there are so many fun ways to eat your veggies that don’t always include a salad.
Plus, you can even get picky eaters on board…
Which is always a positive, am I right?
My first two suggestions were spiralizing more vegetables or ricing more vegetables.
If you didn’t read that, you can go back to that blog and see what vegetables I recommended.
Today, I want to offer two additional suggestions for adding more vegetables into your meals…
So let’s get started with number three.
The third recommendation I have…
EAT VEGGIE BASED SOUPS.
There are a number of vegetables you can incorporate into your broth based soups.
Broccoli.
Cauliflower.
Asparagus.
Celery.
You can puree the vegetables into the broth…
And even add more veggies into the actual soup.
The flavor combinations are pretty much endless.
Additionally, you can add some herbs and spices to elevate the taste and enjoy your vegetables in a different form.
For example, you could make the classic chicken noodle soup…
But switch the noodles for one of your spiralized vegetables!
You could experiment and find a really unique, delicious combination.
It’s really more about being aware of opportunities you have to add vegetables in a different form into “classic” dishes traditionally served at meals.
But maybe you’re wanting a quick way to add veggies into a meal.
Enter my fourth recommendation…
BLEND INTO PROTEIN SMOOTHIES.
Vegetables such as spinach and kale are good here.
It’s a great way to add more greens without compromising flavor.
Sure, you could experiment with other frozen vegetables, but I couldn’t really say the flavor would be all that great.
Instead, juicing would be a better alternative.
Still, every little bit adds up so I would stick with the veggies that don’t add additional flavors that may significantly alter the taste of your protein smoothie.

***There are so many different vegetables and different varieties out there. Don’t limit yourself. And check out places other than your grocery store. Farmer’s markets are a great place to find seasonal vegetables that may not be in traditional grocery stores.
